Commissary Services
Commissary Services
Utah Correctional Industries’ Commissary program operates as a centralized canteen serving both the Utah State Correctional Facility and the Central Utah Correctional Facility. The team processes hundreds of thousands of orders each year, providing packaged foods, hygiene products, electronics, approved clothing, writing materials, and arts and crafts supplies.
About the Program
Based at the Utah State Correctional Facility in Salt Lake City, the Commissary uses an efficient roller-conveyor production line to fulfill more than 296,900 orders annually — approximately 3,600 per week. In Fiscal Year 2026 the shop delivered strong operational improvements, including a 3.75% increase in sales, 97.6% bag fulfillment, a 51% reduction in out-of-stock items, and a 64% decline in grievances.
The team transitioned to a staggered four-day workweek while maintaining high service levels, and introduced improved safety training, custom carts (built in partnership with the Welding Shop), and stronger tool control.
Training and Impact
With 50 female program participants, the Commissary provides real-world experience in order fulfillment, inventory control, warehousing, forklift operation, quality control, and logistics. These skills, combined with a professional team environment, help prepare individuals for employment after release while delivering reliable service to facilities across the state.
The high-volume, detail-oriented nature of the work also strengthens reliability, accuracy, and the ability to work effectively in a team — qualities employers look for across industries.
