In 1996, UCI closed its original "dairy" operation, which included the dairy cows. The "dairy," as it is still called, now operates in the same area. With state of the art equipment, UCI provides customers with milk and other beverage products.

For the past 40 years, milk processing has been an integral part of supplying the prison with dairy products. By selling the dairy herd in 1996, it afforded UCI the opportunity to purchase new high-tech beverage processing equipment. With the new equipment, UCI is able to package milk and juices in 5 gallon containers, as well as in 8 ounce plastic pouches. The new pouches allow for easy transportation and minimum waste.

In UCI Milk Processing inmates learn how a business runs, proper procedures for ordering, inventorying, receiving, and delivery of milk. Inmates learn proper food handling techniques to include temperature controls and safe food processing requirements, how to process, homogenize and separate milk and cream. Inmates are given the chance to obtain Pasteurization licencing and can go through a Milk Processing Course and most inmates are given the opportunity to obtain forklift licenses.
